Dandelion is one of my favorite plants, its so versatile. Its one of the first edible spring plants to come out, and when eaten as a salad, can cleanse your blood from all the heavy winter foods one eats during the cold season and get your body ready for eating more spring greens. The root in the spring has the most medicine as it has all of its Chi in the root at this time of year, and in the fall the root has more inulin in it to make a great coffee substitute. Once the flowers come up you can add the petals to your salads and pancakes, make dandelion jam, or dandelion wine! 10 dandelion stems can be eaten daily to help with your digestion, due to its bitter qualities. The leaves make a great tea to help with any edema issues, for high blood pressure, for extra potassium and a kidney tonic.

This is one of those plants that people should get to know and not add pesticides to.
